Bending the rules a bit, because there is so much stuff out there that I really like. I tend to favor lighthearted slapstick, but I also enjoy dark humor, and the occasional violent, dystopic sort of series that quite possibly will get you in trouble with your parents or spouse.
One Piece
Slayers
El Hazard
Yakitate Japan
Cromartie High School
Full Metal Panic (No related to Alchemist or Jacket, of course :P)
Record of Lodoss War
Rurouni Kenshin
Lum Urusei Yatsura
Short Cuts
Jojo's Bizzare Adventure
Bleach
Hellsing
Fist of the North Star
Berserk

Yu Yu Hakuso's nice, but it was the last Anime I saw during my tentative childhood (and I use childhood liberally), so I'm not sure if I'd like the content if I revisited it today.
Basically, any Anime that captures dialogue well, without (many) things being lost in translation. I hate having to sift. Sifting is the compulsive's procrastination.
